Hello there my faithful Fallen. Today we launch the Pinterest Project we discussed last week. This project also falls under the Fun for Under $5 projects that began with some googly eyes. I will be adding some tags and category headings a little later on and hopefully this will be a regular thing. The spirit of DIY is not to have to shell out a bunch of cash to realize an idea. I hope to help with that.

So, here was the project, copied directly from Pinterest, description and all:

Pumpkin Muffins
“Um yum……. I may never eat anything else for breakfast again. Pumpkin Muffins – only 2 ingredients. That’s right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. Bake at 350, this is a Weight Watchers treat, very low cal.”

So, that’s exactly what I did. This was a very inexpensive project. The cake mix was $.92 and the can of pumpkin was $1.29, so the whole project actually cost less than three dollars.

Right about here’s where we began having doubts. Pumpkin is thick and it took a lot of mixing to get the powder completely battered. Bride of Scarydad was convinced it wouldn’t work and that we needed to add the oil, water and egg. But I held firm in the name of science.

Alrighty then. The batter ended up the consistency of cookie dough, maybe even a little thicker. In addition to being thick, it was also sticky, so it was not easy to make pretty little muffins. At about this time also, Daughter of Scarydad was getting hungry and ornery so I bypassed a little presentation for brevity.

The box recommended baking for 19-23 minutes, but they were still very mushy by then. I left them in for closer to 30 minutes and they only really just began to brown. There’s none of the things that make a cake rise in this batter, so as you can see the finished muffins look almost identical to the raw ones.

Finished results: Pretty darn good. They are a bit on the sweet side but with a pat of butter they were delicious. Bride and Baby both enjoyed them as well. The house was full of the aroma of baked goods and pumpkin spice for the rest of the day, so that was good too.

If I were to do anything different, I might add a pinch or two of salt to cut some of the sweetness, and maybe add a little bit of cinnamon. Other than that, however, I recommend this project to anyone who likes pumpkin and/or muffins.

  1. I’m down. Three men in their late 30’s driving around terrorizing suburban neighborhoods. Stealing pumpkins, scaring pedestrians.
